Today was a good day, minus the air conditioner breaking in my classroom, causing my cramped quarters to rise to a ridiculously high temperature by the time lunch rolled around. On to the positive… :)
Before we headed out for a beautiful evening at Broadway at the Beach, I made these delicious mahi tacos for dinner and served them with sweet potato fries. Clicking on the image will bring you to the recipe, which I scored from healthyfoodforliving.com. Chris isn’t a fan of guacamole or crema, so I decided to skip those being it was just the two of us tonight, but I did use the recipe for the fish rub.
One word of caution: I prepared the fish by the book, and it was so spicy that chugged a glass of almond milk while eating it! If you’re not a daredevil when it comes to heat, I would suggest toning it down on the chile powder! I personally preferred the crispy tacos, but Chris was a bigger fan of the fish on a soft tortilla.
